Fatuma is from Congo and Sabol is famous in her country. Every family has a recipe and every woman tries to get a name for themselves as the best Sabol maker of the village. Fatuma’s version is made with onions, chili, ginger, and garlic resulting in a beautifully fresh flavour.
It is used as a sauce that works wonderfully with fish or chicken and can be adapted to use in pork dumplings, to flavour brown rice, vegetables or salads.
