In Congo, every woman crafts her own Sabol. Sido learnt hers at a very young age, now we get to share her secret recipe.  Sido’s version is made with onions, chili, ginger, and garlic resulting in a beautifully fresh flavour. Drizzle over panfried fish or chicken, add to falafel wraps, or pour over creamed cheese as a dip. Also great as a spicy condiment.
